TACOS DE CHICHARRÓN WITH TOMATILLO SALSA

Makes 8 tacos

What you need:

- 2 tablespoons lard
- 1/2 pound pork rinds, cut into bite-size pieces
- 8 corn tortillas
- 8 slices panela cheese
- Chopped fresh cilantro, for garnish
- Tomatillo salsa (recipe follows);
* 1/2 pound tomatillos, husked and cleaned
* 3–4 serrano chiles, seeded and chopped
* 1/2 onion, chopped
* 1–2 cloves garlic, chopped
* 1 teaspoon salt or more, to taste
* What you do;
* Place all the ingredients in a blender and puree until the salsa is mostly smooth, with a few chunks of tomatillos here and there. 


What you do:

1. In a pan, heat the lard over high heat and fry the pork rind pieces, letting them sizzle in their own fat until they get crispy, about 5 minutes. 
2. Divide the chicharrones evenly among the corn tortillas. Put a slice of cheese in each. Garnish with the cilantro and tomatillo salsa.
