Hummus Sandwiches Three Ways

HUMMUS SANDWICHES THREE WAYS

- 6 tablespoons plain hummus
- 4 slices everyday whole-wheat bread or good-quality store-bought whole-wheat bread
- 2 ounces cheese, sliced (Havarti or sharp cheddar recommended)
- 1 1/3 cups fresh spinach leaves, washed and trimmed (or tomato or avocado slices)


1. Spread the hummus evenly over 2 bread slices. Top each with cheese and spinach (or tomato or avocado slices). 
2. Top with the other bread slices to make sandwiches, then use a bread knife to slice each in half. Serve or refrigerate, covered, and eat within a couple of days.
