Guacamole with Bell Pepper "Chips"

GUACAMOLE WITH BELL PEPPER "CHIPS"

- 2 ripe avocados (not too soft to the touch!)
- 2 tablespoons freshly squeezed lime juice
- 2 tablespoons chopped fresh cilantro
- 1/2 jalapēno, seeded and diced (optional)
- 2 tablespoons diced white or red onion (optional)
- 1 garlic clove, minced
- 1/2 teaspoon salt
- 2 bell peppers, any color, cored, seeded, and cut into 1/2-inch-thick slices


1. Slice the avocados in half and remove the pits. Scoop out the flesh into a medium bowl and mash with the back of a fork. 
2. Add the lime juice, cilantro, jalapeño (if using), onion, garlic, and salt and mix thoroughly. Serve with bell pepper "chips" or cover and refrigerate and eat within 24 hours.
