Fruit Salad with Orange Zest

FRUIT SALAD WITH ORANGE ZEST

Difficulty: Easy
Prep time: Less than 20 minutes
Seasonal note: Use locally grown berries and melon in the summer and locally grown apples in the fall
Makes: 4 to 5 servings
Special tools needed: Microplane zester/grater or lemon zester

- 4 cups diced fruit (like melon, apple, bananas, kiwi, and/or berries)
- 1/2 cup plain yogurt
- 2 teaspoon pure maple syrup
- 1/2 teaspoon pure vanilla extract or store-bought vanilla extract
- 1/2 teaspoon chopped orange zest


1. Place the diced fruit in a large serving bowl and side aside. 
2. In a small bowl, combine the yogurt, maple syrup, vanilla, and orange zest. Mix thoroughly. 
3. Pour the yogurt mixture into the fruit bowl and carefully combine until well blended. Serve immediately or within a few hours.
