TAMAGO YAKI

Serves 4

5 mins cooking time

- 3 eggs
- 1 tablespoon dashi
- 1 rounded tablespoon raw (demerara) sugar
- 1 teaspoon soy sauce
- Sunflower oil, for frying


Break the eggs into a bowl. Add the dashi, sugar and soy sauce and combine well. Heat a little oil in a medium-sized frying pan (about 22 cm/8 1/2 in diameter). Remove any excess oil with a paper towel, making sure the whole surface of the frying pan is evenly coated with oil. 

Pour in a fifth of the beaten eggs mixture and spread it out very thinly, as for a crêpe. Before the surface is completely dry, roll the omelette toward the edge of the frying pan.

Pour in another fifth of the mixture and spread it out under the first roll. When it is cooked (without being dry), roll the new crêpe around the first roll. Repeat this process until you have used up all of the mixture. 

Using a bamboo sushi mat, shape the omelette into an attractive square roll. Let it cool inside the mat. Slice the omelette roll into 6 pieces and serve.
