CHICKEN DUMPLING WITH SAUCE
Ingredients:
- 3 ounces lean chicken
- Chopped scallion
- 20 wonton wrappers (3 1/2 inches)
- 2 tablespoons soy sauce
- Sugar
- 1 garlic cloves, minced
- Cornstarch
- Water
2. Clear a large space on the counter. Set a small bowl of water, the bowl of filling, and a parchment-lined baking sheet nearby. Open the package of dumpling wrappers and arrange a few on the work space in front of you.
3. Mix chicken, garlic, scallion, soy sauce, sugar, and cornstarch in a large bowl until thoroughly combined. Place a dumpling wrapper on a lightly floured work surface and spoon about 1 tablespoon of the filling in the middle. Wet the edge with a little cornstach water and crimp together forming small pleats to seal the dumpling. Repeat with remaining dumpling wrappers and filling.
4. Add the dumpling to a bamboo steamer (or you can use rice cooker) and steam them over a pot or wok until they are cooked through, about 15 minutes. To make sure the dumpling don't stick to the steamer, lightly oil the steamer or laydown some lettuce in the bottom of the steaming rack.
5. Let the dumpling cool briefly when they come out of the steamer and then serve them immediately with the sauce.
