Thai Tomato Soup with Lime Leaf Oil

THAI TOMATO SOUP WITH LIME LEAF OIL
Serves 4u
Ingredients:
- 800 g tomatoes, blended
- 1 cup water
- 1 tbsp shrimp paste
- 1 tbsp tom yum paste
- 1/2 cup coconut cream
- 2 tbsp lime juice
- 1 tsp fish sauce
- 1 tbsp oil
Kaffir lime leaf oil:
- 5 lime leaves
- 2 tbsp extra virgin olive oil
- pinch of salt
Steps:
1. In a saucepan, heat oil, and sauté shrimp paste and tom yum paste until fragrant.
2. Add the blended tomato, water, coconut cream and let it boil. Once boil, turn down the heat and let it simmer until soup reduces and thickens.
3. Add lime juice and fish sauce to taste.
4. Serve with crusty bread and garnish with kaffir lime leaf oil.
5. Kaffir lime leaf oil: Blend all ingredients together in a food processor.
