COCONUT RICE

This is a traditional Betawinese ( the original inhabitants of Jakarta) dish, and is my dad's favourite for breakfast. When i was younger, we used to buy this from our neighbour, who sold it from the verandah of her house every day from 5 am to 7 am. By 7 am it was all gone. This is a very typical Indonesian way of doing business "at home"; despite the high demand, our neighbour didn't see the point of making more than she could sell in these 2 hours.


Serves 4

Ingredients:

- 2 cups rice
- 1 1/2 cups water
- 1 cup coconut milk
- 3 cm galangal, peeled, sliced
- 2 kaffir lime leaves
- 2 stalk lemon grass, bruised
- Pinch of salt
- Fried shallots (fried until browned and crisped in a little oil)

Tools:

- Rice cooker

Methods:

1. Wash the rice, then put inside the rice cooker. 
2. Pour in the water and coconut milk. 
3. Add the galangal, lemongrass, kaffir lime leaves and salt, mix well. 
4. Turn the rice cooker on and wait until the rice is cooked. 
5. When it's done, mix the rice thoroughly. 
6. Serve while hot.
