French Onion Soup

FRENCH ONION SOUP

Serves 6-8

Ingredients:

- 1/2 cup unsalted butter
- 4 pcs onions, salted
- 2 pcs garlic cloves, chopped
- 2 pcs bay leaves
- 2 pcs fresh thyme sprigs, kosher salt, and freshly ground black pepper
- 1 cup red wine, about 1/2 bottle
- 3 tbsp all-purpose flour
- 4 cups beef stock
- 1 pc baguette, sliced
- 30 gr gruyere cheese, grated



Steps:

1. In a large pot, melt the butter over medium heat. Add the onions, garlic, bay leaves, thyme, and salt and pepper and cook until the onions are very soft and caramelized. 
2. Add the wine, bring to a boil, reduce the heat and simmer until the wine has evaporated and the onions are dry. Remove the bay leaves and thyme sprigs. Add the flour to the onions and stir well. Turn the heat down to low so the flour doesn't burn. Cook for 10 minutes to cook out the raw flour taste. 
3. Add the beef stock, bring the soup to a simmer, and cook for 10 minutes. Season, to taste, with salt and pepper. 
4. To serve, ladle the soup into bowls, to each with 2 slices of bread and top with cheese. Put the bowls into the oven to toast the bread and melt the cheese.
