PIZZA BITES

- 14 mini whole-wheat pita pockets (about 2 1/2 inches across; we buy ours from trader joe's)
- 1/2 cup homemade tomato sauce or store-bought organic sauce
- 3/4 cup grated mozzarella cheese


1. Preheat the oven to 425°F. 
2. Lay the whole pitas out on a baking sheet. Spread a small spoonful of the tomato sauce on top of each pita, the divide the cheese evenly among them. 
3. Bake for 8 to 10 minutes, or until the cheese is melted and start to turn golden brown. Serve the pizza warm, refrigerate them for up to several days, or freeze them in a large freezer-safe container or bag separated with wax paper.
