Asian-Inspired Rice

ASIAN-INSPIRED RICE

- 4 servings brown rice (3 cups cooked), cooked according to the package directions
- 1 avocado, diced
- 1/2 cup chopped fresh cilantro
- 1/3 cup roasted peanut, chopped
- 2 tablespoons soy sauce (preferably low sodium)

1. Mix all the ingredients in a large bowl. Serve warm or cold. 


Tips:
If making this dish in advance, wait to add the peanuts just before serving.
