Peanut Butter Cookies

PEANUT BUTTER COOKIES

Difficulty: Easy
Prep and bake time: Less than 30 minutes
Makes: About 20 cookies
Special tools needed: Electric mixer, large baking sheet, and cooling rack (optional)

- 1 1/4 cups whole-wheat flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup natural peanut butter
- 3/4 cup pure maple syrup
- 1/2 cup (1 stick) butter, softened slightly and cut into chunks
- 1 egg
- 1 teaspoon pure vanilla extract or store-bought vanilla extract
- 1/2 cup unsalted peanuts


1. Preheat the oven to 325°F. 
2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside. 
3. In the bowl of a stand mixer fitted with a whisk (or in a large bowl and using a handheld electric beater), thoroughly mix the peanut butter, maple syrup, butter, egg, and vanilla. Mix until almost smooth; some small butter chunks may remain in the batter, which is okay. 
4. Turn the mixer down to low and slowly add the flour mixture until well combined. Do not overmix. Carefully stir in peanuts by hand. 
5. Drop the cookie dough by the spoonful onto a large ungreased baking sheet and bake (in batches if necessary) until the cookies are light golden brown, about 15 minutes. Transfer to a rack to cool (if you have one).
