EGGS IN A BASKET

Difficulty: Easy
Prep and cook time: Less than 10 minutes
Makes: 4 servings
Special tools needed: Any shape cookie cutter approximately 3 inches in diameter

- 4 slices everyday whole-wheat bread or good-quality store-bought whole-wheat bread
- 2 tablespoons butter, divided
- 4 eggs
- Salt and ground black pepper, to taste

1. Cut out the center of each slice of bread using a cookie cutter (set the cutouts aside but do not discard). 
2. Melt 1 tablespoon of the butter in a medium sauté pan over medium-low heat, or on a griddle set at 350°F. 
3. Add 2 pieces of bread to the pan and crack an egg into each bread hole. If there's room in the pan, add the bread cutouts to toast. Season with salt and pepper and cook for several minutes until the eggs are mostly set. Carefully flip over all the pieces and cook for another 1 to 2 minutes. Add more butter to the pan if necessary. 
4. Repeat with the remaining 2 sets of bread and 2 eggs and serve warm.
