BAKED CHICKEN NUGGETS
These morsels are baked (not fried) and coated with almonds, making them healthier than usual.
To make:
•Combine 1/2 cup milk, 2 teaspoons calamansi juice, 1 teaspoon garlic powder, 1/2 teaspoon salt, and 1/8 teaspoon pepper.
•Add 500 grams skinless chicken breast fillets (sliced into 1 1/2-inch squares).
•Marinate, covered, in the refrigerator for 1 hour or overnight.
•Preheat oven to 400°F. Spread 1/4 cup melted butter or olive oil on a baking tray; set aside.
•Combine 1 cup all-purpose flour, 1/2 teaspoon garlic powder, 1/2 teaspoon salt, and 1 tablespoon malunggay powder on a plate.
•Place 1 egg (beaten) in a bowl and 1 cup almonds (finely ground in a food processor) on another plate.
•Dredge chicken in flour, dip in egg, then coat with almonds; place on prepared baking tray.
•Drizzle with 1/4 cup melted butter or olive oil. Bake for 10 to 15 minutes or until golden.
•Serve with ketchup or sweet chili sauce.
