Mussel Livornese Soup

MUSSEL LIVORNESE SOUP

Serves 1

Ingredients:

- 150 gr blue mussels
- 50 gr onion, chopped
- 15 gr garlic, finely sliced
- 50 gr tomatoes, chopped
- 25 ml white wine
- 10 gr flat leaf parsley
- 3 gr chili flakes
- 100 ml fish stock
- 10 ml extra virgin olive oil
- 100 gr sour dough bread
- 1 gr salt

- 1 gr black pepper

Steps:

1. In a large saucepan, heat oil. Add chopped onions, and garlic and cook for 1-2 minutes. 
2. Increase heat and add white wine, fish stock and bring to the boil. Add tomatoes and bring back to a boil. 
3. Add cleaned mussels and cook covered over a moderate heat for about 5 minutes. Discard any mussels that have not opened. 
4. Seasoned with salt and pepper and serve.
