BOILED VEGETABLES AND EGG WITH PEANUT SAUCE (GADO-GADO)
This dish is very popular in Jakarta and a lot of women. Including me, tend to eat Gado-gado for brunch because they want to keep slim by eating vegetables. Most Gado-gado street vendors will finish by 2pm.
Serves: 2
Ingredients:
- 2 potatoes, skins removed
- 2 eggs
- 100 grams long beans or string beans (string removed), cut and boiled.
- 100 grams morning glory or spinach, boiled
- 100 grams white cabbage, sliced and boiled
- 200 grams tofu, cut into 2 cm cubes and fried
Peanut sauce:
- 2 chilies
- 250 grams peanut butter
- 1 cloves garlic
- Salt
- 2 teaspoons palm sugar
- 1-2 cups water
- 1/2 teaspoons shrimp paste, fried
- 2 tablespoons tamarind juice (dissolve the tamarind with hot water and sieve it)
- 1 lime
Methods:
1. In separate saucepans, boil the potatoes and eggs. When cooked, peel the eggs and slice the potatoes and eggs into 1 cm wide slices.
2. In a food processor, grind peanut butter garlic, chilies, salt, tamarind juice, and palm sugar until smooth.
3. Add a little bit of water if the mixture is too thick.
4. Arrange boiled potatoes, eggs and vegetables on a plate.
5. Pour peanut sauce over this stir well.
6. Sprinkle with lime juice.
