DEVILED EGGS

Makes 24 deviled egg halves

What you need:

- 1/2 teaspoon baking soda
- 12 eggs
- 2 cups mayonnaise
- 2 tablespoons sour cream
- 2 teaspoons honey
- 2 teaspoon dijon mustard
- Juice of 1/4 lemon
- Salt
- Paprika and fresh herb, for garnish


What you do:

1. First, cook the eggs: Pour 2 quarts water into a big pot and add the baking soda to the water. Bring the water to a boil and add the eggs. Cook for 1 minute. Then turn off the heat, cover the pan, and let the eggs sit for 12 minutes. 
2. When the eggs are done, immediately submerge them in an ice bath for 10 minutes or until they're cold. 
3. Peel and clean the eggs, and cut each one in half. Remove the yolks. 
4. Now make the filling: In a food processor, combine the egg yolks, mayonnaise, sour cream, honey, mustard, and lemon juice. Blend on high speed for approximately 1 minute, or until silky smooth. Don't forget to add a pinch of salt. 
5. Let the filling set for 1 hour and then put it into a piping bag. Don't have a piping bag? No biggie. A zip-lock bag works well. Just cut an opening in one corner and squeeze. Pipe the filling into each egg white. Garnish with your favorite herbs and a pinch of paprika.
