KATSU SANDO

Serves 4
15 mins preparation time + time to prepare tonkatsu

Coleslaw:
- 1/6 white cabbage
- A few herb leaves, such as shiso (perilla), mint and coriander (cilantro)
- 1 tablespoon olive oil
- Juice of 1/2 organic lemon
- 1 pinch salt

- 8 slices sandwich bread
- 2-3 tablespoons whole-grain mustard
- 4 tablespoons mayonnaise
- 1/4 cucumber, sliced
- 4 tonkatsu
- 4 tablespoons tonkatsu sauce


To make the coleslaw, use a mandoline to thinly slice the cabbage. Finely chop the herbs. Combine the cabbage, herbs, olive oil, lemon juice and salt in a bowl and leave to marinate for 5 minutes. 

Toast the bread. Spread two slices of bread with mustard and mayonnaise. Place the following, in order, on one of the slices: cucumber slices, tonkatsu, 1 tablespoon tonkatsu sauce and a quarter of the coleslaw. Top with the other slice of bread. Repeat the process for each sandwich.
